Breakfast and Dinner

Ok people it's time for some "clean eating" recipes! :) 

I got this Spicy Egg recipe from the bodyforlife.com website. There are tons of recipes that I have added to my recipe box. (BTW I'm in the process of making a new one... should be pretty cute! I'll post pictures when it's done :]).

This recipe is delicious, please try it. 

.::Ingredients are::.
              • 4 eggs, 2 egg whites
          • 1 Tablespoon Fat-Free Plain (or Greek) yogurt
        • 1/4 Cup Skim Milk (I use 1% because I have this thing against Skim)
          • 1 Teaspoon Bottled, Minced Garlic (this is my BFF)
        • 1/2 Teaspoon Crushed Red Pepper (I used a fresh Red Pepper)
              • 1/4 Cup Cilantro, chopped
              • 1/4 Teaspoon Salt
            • 1/4 Teaspoon Pepper Ground
          • 2 Tablespoons of low-fat Shredded Parmesan Cheese
So what you'll do is whisk everything BUT the Parmesan Cheese together and scramble up in a pan (don't forget to spray some cooking spray otherwise you'll have a mess on your hands). Then when it's cooked you sprinkle some of the Parmesan Cheese and voila! healthy meal :) 
Toast and an Orange is a good pair to this meal :)

Clean Eating Enchiladas
(makes 36)

.:: Ingredients are::.

..:::Enchilada Sauce:::...
4 tbsp. olive oil
4 tbsp. whole wheat pastry flour
8 tbsp. chili powder
2 (15 oz.) can clean tomato sauce
4 cups water
1/2 tsp. ground cumin
1/2 tsp. garlic powder
1/2 tsp. onion powder

The sauce will thicken as it cooks :) 

Enchilada Ingredients
36 clean tortillas (got mine at Sunflower Market)
5-6 large, boneless, skinless chicken breasts, baked (I just put in a pan on the stove)
3 (15 oz) cans clean refried beans (I used Kidney beans--The clean refried beans recipe is here)
1 batch enchilada sauce

SAUCE DIRECTIONS
Step 1 – Put oil, flour and chili powder in a medium to large stock pot and warm. You should have a nice paste-like substance when everything is mixed. Cook, stirring constantly for about 1 minute.
Step 2 – Add tomato sauce and water to the pot and stir.
Step 3 – Add in the cumin, garlic powder and onion powder and stir constantly for about 5 minutes. The sauce should thicken slightly.
Step 4 – Set aside.
ENCHILADA DIRECTIONS
Prep:
Pre-heat oven to 350 degrees F.
Line two cookie sheets with parchment paper.
Pre-bake the chicken (I did not use any spices at all).
Shred the chicken using two forks.
Mist a large casserole dish with olive oil (I cut the recipe in half and squished it all into 1 casserole dish.)
Step 1 – Empty the beans out into a bowl for easy access.
Step 2 – Warm your tortillas in the microwave by wrapping them in a damp paper towel and microwave for approximately 2-3 minutes, or until soft and pliable. If you do not have a microwave, you will have to warm the tortillas on your stove top, one at a time as you work.
Step 3 – Spoon and spread about 1 tbsp (give or take) of beans on to a warmed tortilla.
Step 4 – Place the same amount of shredded chicken in the center of the tortilla and roll up (like a burrito without the ends tucked in).
Step 5 – Place, end-of-wrap side down, in a your casserole dish and repeat until the dish is full.
Step 6 – Divide the sauce between your dishes evenly.
Step 7 – Place in oven and bake for about 15-20 minutes. It’s done baking when the sauce bubbles.

Step 8 –
Add any toppings you’d like. 
Some ideas for toppings are:
Shredded cheese (usually cheddar--I used the Mexican Blend)
Low fat sour cream
Shredded lettuce
Guacamole
Tomatoes
Onions

Step 9 – Allow to cool (the sauce will be VERY hot!), and serve.


Let me know if you make these and if you enjoyed them. I did add a little bit of rice to the enchiladas to help make them a little bit more hearty. You'd have to use the healthy rice.

"Clean eating"? I think YES!

So I have had an amazing friend (see her blog HERE) start the "Best Life Diet" aka "Clean Eating". She has completely changed her diet around and is now following the guidelines of this NEW way of living. She has lost 25 pounds doing this! Morale of the story is that she has inspired me to get my butt in gear. :)

3 months to go!

I'm so excited! Everything on all of the "to-do" lists that I have are coming to an end! 

Everything is planned! 

I've FINALLY found the dress (it only took 5 months to find).... :] 

I'm SOOO happy!

I can't wait to become Mrs. Nick Walters

It's gonna be a good day!
