Can you say... Slacker?

WOWZAH! I am horrible (as of late) when it comes to blogging. Work has been busy. Planning our wedding has been busy. But it has been soooo fun! :) We are down to 33 days until we get married! I am so excited! This day could not come soon enough! We decided that we are going to go here for our Honeymoon! :)

It's gonna be such a great week and a half!
We are FINALLY getting out our invitations this week! I'm so relieved to have finally gotten to this stage!
And I am walking down the aisle to THIS song! :) Love it!

Well... I must be getting back to work! If you'd like an invite, please comment below with your address and I'll get you one! THANKS!!!!

Showers... Baby or Bridal it doesn't matter...

So.. I have a lot of friends that have gotten married and I didn't go to their Bridal Showers... I bought them a gift, but never went. I have had a lot of friends have babies... and I have neglected going to the Baby Showers...

I'm trying to make a change here with my wedding and trying to become more open to the idea of showers of any kind... I'm not quite sure what overcomes me when it comes time to go to or be apart of a shower that has me running for the door...
Either way... I don't like them...

Now, I love seeing people's faces when they open up the presents I got them... and I like receiving presents... but having everyone sitting around, being the center of attention, playing weird games, being in a room full of ZERO testosterone... SORTA MAKES ME NERVOUS and gives me anxiety!

I don't know what it is... But I wanted to apologize to those friends I haven't supported. I'm trying hard to get over my weird ways, and embrace everything about being a woman!!
It's just sometimes difficult.

Please bear with me... :)

Where is the LOVE?

I know that my blog was viewed over 25 times yesterday...
(by someone other than myself ;])...
I find it completely disappointing that
I didn't receive ANY comments on anything

That's just rude. :(

Seriously? Wow... Rude!

Those (look up ^^) are the words that keep popping up in my head... Before I go into anymore detail, this post is probably TMI and completely inappropriate but I don't care! I haven't ever had anything quite like this happen to me before! So why not blog about it, right? :) Anyway, with that warning out of the way... let's begin!

We have been having a HORRENDOUS bug problem in our little basement apartment. After bugging (no pun intended) our landlords 4 times, they finally told the people upstairs that they were in charge of spraying. Over the weekend, the Mom (that's what we're going to call her) came down and asked us if Tuesday would work. Nick would be home so it was perfect

She came over and sprayed, as planned, and when she got to our bedroom I had forgotten to put away something that is slightly inappropriate to be out in the open. It's what's called a "Sex Deck" and has flash cards of all sorts of positions. (Don't you dare judge!) I had it in front of our ipod dock, blocking the light (at night time) from my eyes so I could sleep. When Nick noticed that it was out and not "hidden", he quickly grabbed it and slid it under the pillows on the bed. I believe she noticed his quick response and when Nick went into the other room for a few seconds to grab a swiffer duster, she must have taken this "Sex Deck".

We have searched our apartment high and low, and are coming up short... There isn't a place that we haven't checked where it MIGHT be. So my friends and I have come up with some solutions to this problem. Any comment giving your opinion of what we should do would be helpful. :)

Option 1: Confront her on her way to her car, and ask her about it.
Option 2: Buy the exact same "Sex Deck", wrap it up, and leave it *anonymously* on her porch with a nice little note that says, "Can we have ours back now?"
Option 3: Pretend it never happened, and buy another...
Option 4: Tell the landlords....?

What would you do in this situation?

Photographs by Robin is AMAZING
Please Facebook her, and use her.
She's wonderful!

What are your thoughts on this picture?

People, Manners and HORRIBLE Parenting

I am not sure what it is that N and I are attracting lately, but we can't seem to attract the "right" kind of people around us lately.

For example... Sunday night we decided that we were going to go see Transformers 3. I was pretty damn excited about this movie because not only do I love Shia Lebouf, but I also LOVE Camero's. (Bumble bee is amazing... I want one so bad!).

Anyway, we are sitting back enjoying the previews when this woman walks in with about 3 other people (they look like teens) and she is holding the hand of a toddler (I'd say he was about 3 1/2--ish). While they're walking up the little stairs the boy is just getting over some crying and says to his mom "Mom, I hate you!". It was just loud enough for everyone in the theater to hear, and start to chuckle. I have to admit... I was among the laugher's.  So, as the previews ended and the movie began the kid was good. About halfway through the movie the kid was on the stairs jumping as hard as he could all the way down to the bottom. Then would run back up to the top and start all over again, shaking each row that he landed on. It was annoying. Then the mom decided to move down to the handicapped seating on the lowest level before you go down the stairs toward the movie screen.

That's when the real fun began. The little boy would run from the entrance of the movie theater to where is mother was sitting, up the stairs then jump his way back down, and finally he would swing and climb through all of the rails.
IT WAS THE MOST ANNOYING THING I HAVE EVER DEALT WITH WHILE TRYING TO WATCH A MOVIE!!!!!

So about 10 minutes of me sitting there (almost saying something to the ignorant woman who thought the movie theater was a jungle gym), I left and told the manager. The woman was asked to leave, made a stink about leaving and was gone for the rest of the movie.

Now when I thought that was all over and I was going to enjoy Shia screaming at people, rescuing that GORGEOUS girl, and watching cars turn into Autobots. Little did I know that this little Hispanic girl sitting next to N was going to start doing what the toddler had just got done doing. It was a royal pain in my tush! The parents of this little girl, didn't seem to care... (which was the most difficult part of this whole situation)They also had two little boys sitting on the row behind us/them, and they wouldn't stop talking throughout the entire movie. I was too busy focusing on the toddler to have noticed these boys.

WHERE ARE THE GOOD PARENTING SKILLS???

After the movie, I went to the bathroom and N spoke with the manager again, apologizing for having complained--we're both easy going. The manager then turned around and gave us 2 free movie passes... AWESOME right?! I'm happy! He also said that when he asked the woman to leave the theater with the toddler, she smelled of alcohol. Poor kid. :(

Then, yesterday N and I went to Jason's Deli for lunch. This place is DELICIOUS!!!!!! We ordered our food, got our drinks, and sat down in the booth. Behind me was a Father with two daughters. He was SCREAMING at one of the daughters, telling her how he was going to disown her, how she wasn't welcomed in his home(s) any more, how he doesn't love her anymore and how he can't seem to trust her anymore. She apparently had stolen some jewelry from his ex-wife and pawned it at a local pawn shop.

I don't care what your daughter did, Jason's Deli is not the appropriate venue for you to be having the conversation you're having, and making her cry.

I hope that parents that read this, understand that I realize that crap happens.... and you have to deal with it at an inconvenient time. However, I believe that you need to remain composed enough and stay rational in your thinking to realize who could be listening to your conversation and who could be effected by what you're saying to your child.

Breakfast and Dinner

Ok people it's time for some "clean eating" recipes! :)

I got this Spicy Egg recipe from the bodyforlife.com website. There are tons of recipes that I have added to my recipe box. (BTW I'm in the process of making a new one... should be pretty cute! I'll post pictures when it's done :]).

This recipe is delicious, please try it.

.::Ingredients are::.
              • 4 eggs, 2 egg whites
          • 1 Tablespoon Fat-Free Plain (or Greek) yogurt
        • 1/4 Cup Skim Milk (I use 1% because I have this thing against Skim)
          • 1 Teaspoon Bottled, Minced Garlic (this is my BFF)
        • 1/2 Teaspoon Crushed Red Pepper (I used a fresh Red Pepper)
              • 1/4 Cup Cilantro, chopped
              • 1/4 Teaspoon Salt
            • 1/4 Teaspoon Pepper Ground
          • 2 Tablespoons of low-fat Shredded Parmesan Cheese
So what you'll do is whisk everything BUT the Parmesan Cheese together and scramble up in a pan (don't forget to spray some cooking spray otherwise you'll have a mess on your hands). Then when it's cooked you sprinkle some of the Parmesan Cheese and voila! healthy meal :)
Toast and an Orange is a good pair to this meal :)
(Bran Bread--Harper's Homemade is delicious and healthy enough for you)

Next recipe is from thegraciouspantry.com
Seriously, I don't know what I would do without this lady. If I'm starving, and I just want to find a quick recipe this lady has it figured out!
AND there's a handy dandy search tool right there on the top right of her website!
Check it out :)

Please note: I copied and pasted the recipe from thegraciouspantry.com's website.

Clean Eating Enchiladas
(makes 36)

.:: Ingredients are::.

..:::Enchilada Sauce:::...
4 tbsp. olive oil
4 tbsp. whole wheat pastry flour
8 tbsp. chili powder
2 (15 oz.) can clean tomato sauce
4 cups water
1/2 tsp. ground cumin
1/2 tsp. garlic powder
1/2 tsp. onion powder

The sauce will thicken as it cooks :)

Enchilada Ingredients
36 clean tortillas (got mine at Sunflower Market)
5-6 large, boneless, skinless chicken breasts, baked (I just put in a pan on the stove)
3 (15 oz) cans clean refried beans (I used Kidney beans--The clean refried beans recipe is here)
1 batch enchilada sauce

SAUCE DIRECTIONS
Step 1 – Put oil, flour and chili powder in a medium to large stock pot and warm. You should have a nice paste-like substance when everything is mixed. Cook, stirring constantly for about 1 minute.
Step 2 – Add tomato sauce and water to the pot and stir.
Step 3 – Add in the cumin, garlic powder and onion powder and stir constantly for about 5 minutes. The sauce should thicken slightly.
Step 4 – Set aside.
ENCHILADA DIRECTIONS
Prep:
Pre-heat oven to 350 degrees F.
Line two cookie sheets with parchment paper.
Pre-bake the chicken (I did not use any spices at all).
Shred the chicken using two forks.
Mist a large casserole dish with olive oil (I cut the recipe in half and squished it all into 1 casserole dish.)
Step 1 – Empty the beans out into a bowl for easy access.
Step 2 – Warm your tortillas in the microwave by wrapping them in a damp paper towel and microwave for approximately 2-3 minutes, or until soft and pliable. If you do not have a microwave, you will have to warm the tortillas on your stove top, one at a time as you work.
Step 3 – Spoon and spread about 1 tbsp (give or take) of beans on to a warmed tortilla.
Step 4 – Place the same amount of shredded chicken in the center of the tortilla and roll up (like a burrito without the ends tucked in).
Step 5 – Place, end-of-wrap side down, in a your casserole dish and repeat until the dish is full.
Step 6 – Divide the sauce between your dishes evenly.
Step 7 – Place in oven and bake for about 15-20 minutes. It’s done baking when the sauce bubbles.

Step 8 –
Add any toppings you’d like.
Some ideas for toppings are:
Shredded cheese (usually cheddar--I used the Mexican Blend)
Low fat sour cream
Shredded lettuce
Guacamole
Tomatoes
Onions

Step 9 – Allow to cool (the sauce will be VERY hot!), and serve.

Let me know if you make these and if you enjoyed them. I did add a little bit of rice to the enchiladas to help make them a little bit more hearty. You'd have to use the healthy rice.
